Slow Cooker Fajita Chicken Alfredo

chicken pasta dish with peppers and creamy sauce

I've always wanted a slow cooker after seeing how easy it was to make amazing looking and tasting dishes. Went to go buy one and then my mum turns around and says we already have one, had it for years! Erm hello, why didn't you tell me and more importantly why are we not using it?
I cam across this Slow Cooker Fajita Chicken Alfredo recipe on twitter. The account was called DIYRecipes. The original recipe is actually Cajun Chicken however I couldn't find the seasoning so I used Fajita instead. Still was tasty!

What you will need:
  • Slow Cooker
  • 3 Chicken breasts
  • 4 tsp Fajita seasoning
  • 1/4 tsp Garlic powder
  • 1/4 tsp Pepper
  • 1/2 tsp Salt
  • 1/2 tsp Dried basil
  • 4 tbsp butter
  • 1 Red bell pepper (chopped)
  • 1 Yellow bell pepper (chopped) I used green but think yellow would of been better
  • 2 cups Heavy cream
  • 8 oz Penne Pasta
Instructions:

1. Add all ingredients into the slow cooker except for the pasta and cook on high for 2 1/2 hours.

2. Shred the chicken, add the pasta, mix and cook till pasta is cooked. I did this and it took another hour until ready. I would suggest once you shred the chicken start to cook the pasta in a separate pot and add once cooked. Will take less time but the sauce will still have time to thicken.

(Was so hard to get a picture that did it justice!)

This was honestly one of the tastiest pasta dishes I have tried. Wasn't to spicy and made a great leftover lunch!
