Mini Kinder Cheesecakes

Those videos on Facebook have caught my eye again and I spotted this Kinder Cheesecake Recipe. Those videos are dangerous I tell ya! I have a long list of ones I want to attempt.
I have never made a cheesecake before and the video made it look simple enough (don't they always) and so I attempted this for myself and my cousin. They were so good he had about 3 that day! Quick and easy to make so if you have kids this would be perfect to make with them too!

What you will need (makes 12):
  • 200g digestive biscuits 
  • 80g unsalted butter
  • 600g cream cheese
  • 175g icing sugar
  • 150g Kinder bars (to melt)
  • Extra bars to mix in with mixture and decoration

Instructions:

1. Blend all the digestive biscuits until all large lumps are gone.

2. Melt the unsalted butter and mix into the biscuit mix. 

3. Put the biscuit mixture into cupcake cases, flatten down and leave to refrigerate for 30 minutes.

4. Whisk the cream cheese and icing sugar together. I added the icing sugar gradually.

5.  Melt 150g of Kinder bars and fold into the cheesecake filling.

6. Add the rest of the Kinder bars into the mixture. Save some for decoration.

7. Add the filling to the biscuit bottoms and add a Kinder Bueno piece on top.

8. You can either eat now or leave in the fridge to harden.
